CHOCOLATE CHEESECAKE BROWNIES RECIPE


Chocolate Cheesecake Brownies

Ingredients
  • 125g butter
  • 125g dark chocolate
  • 200g soft brown sugar
  • 3 lightly beaten eggs
  • 50g plain flour
  • 50g cocoa powder
  • 1/4tsp baking powder
  • 200g cream cheese
  • 50g caster sugar



Method
  • Preheat the oven to 180C/Gas Mark 4 and lightly grease a 18 x 18 x 5cm square tin. Place the butter, chocolate and brown sugar in a saucepan and stir over a medium heat until the chocolate melts. Remove from the heat, cool for a minute or two, then whisk in the eggs. Add the flour, cocoa powder and baking powder and mix until smooth. Pour this mixture into the baking tin. Beat the cream cheese and caster sugar together. Spoon this randomly over the chocolate mix. Use a knife to swirl the cheese mixture into the chocolate to create a marbling effect. Bake for 35-40 minutes. Leave to cool in the tin, then mark into squares.
  • You can add some chopped walnuts or dried fruit to the chocolate mix before baking. Alternatively these can be used with some grated chocolate to decorate the top of the brownies before serving

CHOCOLATE CHIP BROWNIES RECIPE


Chocolate Chip Brownies

Ingredients
  • 115g (4 oz) Butter
  • 115g (4 oz) Plain chocolate, broken
  • 300g (10.5 oz) Caster sugar
  • 2 Eggs
  • 1 teaspoon Vanilla essence
  • 115g (4 oz) Plain flour
  • 2 tablespoons Cocoa powder
  • Pinch Salt
  • 100g (3.5 oz) White chocolate chip

how to cook
Preheat oven to 180C, 350F, gas mark 4. Grease 7 inch square cake tin with butter and line with baking paper. Place the chocolate and butter in a small heatproof bowl and set over a saucepan of gentle simmering water until melted. Stir until smooth. Remove from the heat and leave to cool slightly. Stir in the sugar, salt and vanilla essence. Add the eggs one at a time, stirring until blended. Sift the flour and cocoa powder into the mixture and beat until smooth. Stir in the chocolate chips. Pour into tin and bake for 35-40 minutes. Leave to cool before serving the Chocolate Chip Brownies.

GOURMET CHOCOLATE FUDGE BROWNIES RECIPE


Gourmet Chocolate Fudge Brownies

Ingredients & Baking Tips:
  • Gourmet Chocolate: Confused about which chocolate to buy? It is important to buy the very best chocolate you can afford for these brownies. There are so many choices, but the one for this recipe has to be unsweetened chocolate. Ghirardelli chocolate baking bars are a good choice as well as Callebaut chocolate or Baker's chocolate. They come in either 1 ounce squares, a block or in chocolate bars.
  • Baking: Use a 13 X 9 inch greased and floured glass or non-stick baking pan. All ovens were not created equal. Baking time may vary from oven to oven. Always preheat.
  • Easy recipe: This recipe is mixed in one pan for easy clean-up. No mixer is required.
  • Freezing: These brownies freeze well. Make 2 pans and freeze one.

Gourmet Chocolate Fudge Brownie
  • 1 ounce squares unsweetened chocolate
  • 1 cup butter
  • 2 1/2 cups sugar
  • 4 eggs
  • 1 Tbsp vanilla
  • 1/8 tsp salt
  • 1 cup unbleached white flour


Directions:
  • Preheat oven to 350 degrees F.
  • Melt unsweetened chocolate and butter in a large saucepan over medium heat. Do not burn. Remove from heat.
  • Using a wooden spoon or spatula, stir in sugar until well mixed.
  • Add eggs, vanilla and salt and beat well with spoon.
  • Fold in flour and mix just until smooth.
  • Pour into prepared pan.
  • Bake at 350 degrees for 30-35 minutes or until knife comes out clean.
  • Cool and cut into squares.

Variations:
  • Chocolate Chip Brownies: Fold 1 cup chocolate chips into batter and sprinkle a few on top before baking.
  • Chocolate Walnut Brownies: Fold 1 cup chopped walnuts into batter and sprinkle a few on top before baking.

CHOCOLATE NUT BROWNIES RECIPE


Chocolate Nut Brownies

Ingredients
  • 4oz dark chocolate
  • 4oz Butter
  • 4oz caster sugar
  • 4oz icing sugar
  • 2 eggs
  • 4oz self raising floor
  • 2oz hazelnuts
  • 2oz walnuts

   
Ingredients for the topping:
  • 4oz white chocolate
  • 2oz hazelnuts

Method
  • preheat the oven to gas mark 5
  • melt the chocolate and the butter in a bowl over a pan of simmering water
  • stir in the sugars
  • stir in the eggs and flour
  • roughly chop the hazelnuts and walnuts and stir them in
  • keep stirring for three minutes till the mixture is fudgey and leaves the side of the bowl. 
  • pour into a greased tin and bake for 20 minutes
  • melt white chocolate in a bowl over a pan of simmering water, stirring to ensure it doesn't burn. 
  • chop the hazelnuts and toast under the grill 
  • pour the melted white chocolate over the brownies, spread it and then sprinkle over the toasted hazelnuts
  • cut the brownies into squares and serve!

TRIPLE CHOCOLATE BROWNIES RECIPE


Triple Chocolate Brownies

Ingredients
  • 275g (10oz) plain chocolate (70% cocoa solids)
  • 275g (10oz) unsalted butter
  • 85g (3oz) pecans, broken into pieces
  • 85g (3oz) milk chocolate, cut into large chunks
  • 85g (3oz) white chocolate, cut into large chunks
  • 175g (6oz) plain flour
  • 1 tsp baking powder
  • 4 large eggs, lightly beaten
  • 1 tsp vanilla essence
  • 325g (12oz) caster sugar


Method
Makes 20-24 squares. Preparation time less than 30 mins. Cooking time 10 to 30 mins.
  • Preheat the oven to 170C/325F/Gas 3. Line a 30x20x3.5cm/12x8x1½in tin with lightly buttered greaseproof paper or foil.
  • Put the plain chocolate and butter in a large bowl, place over a pan of simmering water and allow to melt.
  • Sieve the flour and baking powder into a bowl and set aside. Remove the melted chocolate from the heat and stir in the sugar. Add the eggs and vanilla essence. Fold in the flour, nuts and chocolate.
  • Pour the chocolate mixture into the prepared cake tin. Place in the oven and bake for 20-25 minutes. The top should be firm but the inside should feel soft when cooked. Allow to cool in the tin. Remove the brownies from the tin and cut into squares.

BITTERSWEET CHOCOLATE BROWNIES RESCIPE


Bittersweet Chocolate Brownies


Ingredients

225g (8oz) bittersweet chocolate
110g (4oz) butter
4 large eggs
1/4 teaspoon salt
1 1/4 cup granulated sugar
1 1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1 cup chopped walnuts

How to make Bittersweet Chocolate Brownies:

Grease and flour a 9-inch square baking pan. Heat oven to 350°. Melt chocolate and butter in a bowl or pan over simmering water, stirring until smooth and warm. In a mixing bowl with an electric mixer, beat eggs with salt and sugar and vanilla until the mixture is light and thickened. Stir in the melted chocolate and butter mixture then fold in the flour and walnuts. Bake for about 25 minutes, or until a toothpick comes out nearly clean when inserted in the centre. Enjoy your brownies

If you want, you can sprinkle chocolate or top off with melted chocolate for better taste!

BANANA BROWNIES RECIPE


Banana Brownies

Ingredients
  • 150g plain flour
  • 50g cocoa powder
  • 8g baking powder
  • 150g unsalted butter
  • 2 bananas
  • 50g walnuts
  • 3 eggs
  • 100g brown sugar


HOW TO MAKE BANANA BROWNIES

Sift the flour, cocoa powder and baking powder into a bowl and mix. Slice the bananas into 5mm slices. Roughly chop the walnuts. Pre heat oven to 170 degrees. Melt the butter and the chocolate. Beat the eggs in a separate bowl and add the sugar. Add the chocolate, butter and banana. Add the flour etc. Mix gently. Pour mixture into a lined baking tray. Bake for 20-25 mins. Cool in tray then remove and cool on a wire rack. ENJOY!
